Creamy Garlic Parmesan Pasta with Spinach

  • 8 oz. (225g) fettuccine or your favorite pasta

  • 2 tablespoons butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 2 cups fresh spinach leaves

  • Salt and pepper to taste

  • Red pepper flakes (optional, for a bit of heat)

  • Chopped fresh parsley for garnish


Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.

Prepare the Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Cream and Cheese: Pour in the heavy cream, then reduce the heat to low. Gradually stir in the grated Parmesan cheese, allowing it to melt into the cream. Continue stirring until the sauce is smooth and creamy.

Add Spinach: Add the fresh spinach to the sauce and gently stir until the spinach wilts and incorporates into the sauce. This should only take a couple of minutes.

Season and Combine: Season the sauce with salt, pepper, and red pepper flakes if using. Remember that the Parmesan cheese is salty, so be cautious with the salt. Taste and adjust the seasoning as needed.

Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy garlic Parmesan sauce. Toss the pasta in the sauce until it's well coated.

Serve: Divide the creamy pasta among plates. Garnish with chopped fresh parsley for a burst of color and freshness.
